Backpacker’s Macaroni Goulash (Recipe)
This macaroni goulash is a family favourite and a MUST on my backpacking trips - especially when I’m out with my son. Packed with protein, veggies, and comfort, it’s the perfect meal after a long day on the trail.
Ingredients:
1 package dried macaroni
ground beef, turkey or chicken (eliminate for vegetarian)
1 can tomato sauce
1 can condensed tomato soup
preferred vegetables (onions, peppers, etc.)
spices (garlic, oregano, cayenne, rosemary, salt, pepper)
favourite hot sauce (if you like that extra spice on the trail)
Instructions:
Over medium-high heat, brown the meat until cooked, drain and then rinse with hot water to remove as much fat as possible (this is helpful to make dehydrating your own food a success).
Sauté veggies with a small amount of oil, then combine with meat, sauces, and spices. Let simmer on low for at least 15-20 minutes.
Bring water to a boil in a separate saucepan. Add macaroni and cook for 12 minutes. Drain and add vegetable - meat sauce mixture and combine.
Let cool completely, and then lay in thin layers on dehydrator trays, paying close attention to how many "servings" you place on each tray (it will be hard to determine once dehydrated).
Dehydrate according to "meat" temps for your dehydrator until completely dry.
As soon as it has cooled (do not let it sit for too long, especially in more humid climates), pack in freezer bags, vacuum seal or reusable silicone bags.
To rehydrate: Add just enough boiled water to cover the food, let sit 15–20 minutes. Optional: Add a drizzle of olive oil or a Babybel cheese on the trail for extra calories and deliciousness!
Trust me - this one is worth the effort. And it tastes EVEN better sitting by a campfire.
